in my 2003 impala, i want to put in an aftermarket deck, is there still a way for me to be able to reset the tire pressure, engine oil, and the other things that are reset through the stock radio?

You can reset the TMPS through the head light switch and the oil life monitor through the gas pedal. As far as the 'personalization' settings, you need to put the factory head unit back in if you want to change something.

For personalization settings you can either put the factory head unit back in, or use a Tech II scan tool to change them.

as stated above, owners manual has the reset procedures without the radio.

Where on Long Island are you? Im in Medford (Suffolk County)
